Meet the Dietitians

Cory Eakins

MS, RDN, LDN

 

Cory Eakins, MS, RDN, LDN was promoted to Nutrition Associate Manager for WKURG in July 2021 after serving two years as the Nutrition Coordinator. Eakins graduated from the University of Kentucky in 2013 with a Bachelor of Science degree in Dietetics and completed the coordinated program’s dietetic internship. He returned to the University of Kentucky to complete a Master of Science degree in Nutritional Science with an emphasis in Sports Nutrition and Wellness in 2015.

Eakins uses a food first approach in order to help students through one-on-one counseling, nutrition education, group presentations, grocery shopping tours, and cooking demonstrations. Eakins takes a ‘food is fuel’ attitude with the student athletes at WKU using the WKU Sports Nutrition program. In addition to these responsibilities, Cory helps students with food allergies navigate the campus dining locations with allergy-friendly menu options.

Kelci Murphy

RDN, LD

Kelci Murphy, RDN, LD was named Nutrition Coordinator for WKU in October 2021. Kelci has practiced as a Registered Dietitian Nutritionist since 2016 in various settings including Clinical and Community nutrition. She is a also a certified instructor for the LifeSteps® Weight Management Program and the Diabetes Prevention Program. Kelci is a graduate of Western Kentucky University (GO Tops!) where she received her Bachelor of Science degree in Dietetics and went on to complete her dietetic internship at Southern University and A&M College in Baton Rouge, Louisiana. 

While Kelci has experience in a variety of nutrition-related settings, her passion lies within her one-on-one counseling sessions and group education classes. She takes a flexible, non-diet approach to nutrition to help individuals cultivate sustainable habits and reach their health goals not matter how big or small.
